Let them eat CAKE!

We are blissfully in the cake sampling stage. Ahhhhh the sweet lure of cake and frosting. Sigh, the endless possibilities of flavor combinations and only Eric and I to dream them up. So many different flavors to try. The challenges, choosing a flavor! But seriously, a wedding cake should be filled with love. And what a great love affair chocolate cake is. Chocolate cake with any frosting really, strawberry, coffee, vanilla and of course chocolate frosting! Alas, the search continues.....below are a couple of pictures of the cakes we sampled! If only we could taste with our eyes..........

I forgot to take pictures at this place. So we didn't actually this exact sample but we did try the center one! Black and White Raspberry, I think the bottom right is the Dulce de Leche.

Our favorite flavor was the chocolate banana chip!

Honeymoon is Booked!

After much consideration and constant research, our honeymoon destination is ....

Walt Disney World!

We will be staying at the Beach Club resort, right next Epcot. We hear this is a central location, we can walk to Epcot, take a short boat ride to Hollywood Studios and have access to three neighboring resorts! Beach club is right next to the Yacht Club and the Dolphin and Swan Resort. Its across the lake from the Boardwalk Resort! All of these places have great dinning options for us to try! 

It took us a while to figure out which hotel to stay at and if we should do the Club Level option. It was to grasp the idea of Disney World being a world not just one central location, like Disneyland. So after awhile I gave up on just reading about the resorts and looked a dammed map :). It all made much more sense this way. But we sat down, looked at the numbers, ruled out some places and naturally gravitate towards Beach Club. We had a couple of people recommend and praise this resort, for its looks and its convenient location. We decided on Club level because we would have access to a private lounge that serves breakfast, afternoon snack and drinks, afternoon tea and during dinner there are more snack and spirits served. We would also have access to a more central location at the resort, a private elevator for club members and concierge services to arrange our reservations and travel. It sounded great to us!

Next order of business is to book our flights and make any reservations necessary (for restaurants or spa)! We both really want to try the Be Our Guest restaurant at Magic Kingdom. It is inside Beauty and Beast's Castle! I really want to try the "Grey Stuff" for dessert, its only available for special occasions, I think our honeymoon counts! We are looking at restaurants that provide special viewing areas for the two firework shows. I'm looking forward to a couples massage and afternoon tea at the Grand Floridian, Disney's crown jewel resort! We can't wait!

Decorations progress

Here is a picture of a finished purple crocheted overlay! Eric's mom was quick, she is almost done with a second one!  I started to learn to do make these, I've already made one complete circle hahahahaah :) I'm not planning on switching jobs :) I'll leave it to the professionals, Maria is an expert MEEP.

Food tasting at Cafe Hidalgo

We officially have booked our caterer for our wedding! 

Yesterday, 7/18, I trekked my way to downtown Fullerton to meet with a prospect caterer, Cafe Hidalgo. With the venue comes four choices of restaurants to cater an event. One offers classic American fare, another is really French, the other is Italian/American food and then there is one that offers Mexican/Spanish food. Eric and I had previously attended the bridal show where we could sample food from all four restaurants. It was a such a lovely event! We informally decided that Cafe Hidalgo was our favorite. So when my online checklist said that I needed to start sampling food, I knew exactly where to do start! I emailed and made an appointment, but Eric couldn't join me, so I ventured on SOLO. 

It was such a pleasant experience, even just going by myself! I entered the restaurant and a waiter immediately knew what I was there for. I was shown to a table, offered a refreshment and chips and salsa arrived promptly. Sigh.....they had me at chips and salsa..... :) Dena, the catering manager came to greet me. She is a very friendly and honest person, a trait that is very appreciative in this wedding business. She walked me through the packages, she answered my questions and also gave great insights on timing of the wedding. ........Then it was time to order food! 

I sampled three salads: Mexican Caeser Salad, House Salad and a Dinner Salad. The house one was delicious, it has candied pecans, what more could I ask for? Then came the entrees. A smorgasbord of food! Steak Chimichurri, , Pecan Salmon, Grilled Achiote Chicken Breast, Red and Green Chicken Enchiladas, Chicken Chilaquiles, Chicken Penne Pasta with Poblano sauce and a Jalapeño cream sauce!
It was all so delicious and I was so full afterwards! I was given to-go boxes for the left overs so Eric got to try the food at home! I won't say what we decided on....but the overall experience was great! During the tastings she showed me a slideshow of past weddings, gave great advice on guests alcohol consumption and at the every end as a booking bonus she gave us a free chips and salsa as an appetizer! Since we can also hire her as a day-of wedding coordinator, she had a lot of insider tips like what to write on the invitations, guest attendance patterns, what to rent for "just in case" scenarios, but above all what sold me, besides the food, was her honesty. She told me what items were the best bargain even though she could make more money off another option, or what to skimp out on because it becomes a huge waste. 

I wish I would have taken pictures of the food, because it was all sample sizes! If you know anything about me, I love tiny things. It was quite the adorable sight! But maybe when we go back so Eric can get a tasting, I will remember to take some pictures!

The decorations have started!

We have officially started making the decorations! Well, Eric's mom has officially started them :) They will act as the overlay on a creme colored table cloth. What a great DIY touch. Eric's mom is such a saint for making these for us, a whole 15 of them :) Thanks again Maria, we are so excited for the turn out!
